INGREDIENTS: 
1 lb red onions
2 lbs chopped stew meet in 1” cubes
3 large sweet peppers (1 red, 1 yellow, 1 green)
1 1/4 lb chopped tomatoes retaining all juices
4 lb peeled and cubed potatoes
1 lb peeled + sliced medallions of carrots
1 lb peeled and chopped parsnips 
3 quarts water
1 TBS salt (+ more if desires)
6 TBS paprika (divided)
1 TBS cumin
Optional 2 cups red wine
Optional noodles, sour cream, noodles and parsley
 
DIRECTIONS:
In a large stock pot on medium high heat sauté the onions and beef until brownish.
Add chopped tomatoes, peppers, and any juice from the chopping block. 
Stir in 1 TBS salt, the cumin, and half the paprika. 
Cover and reduce the burner to low for one hour. 
Now add potatoes, carrots, parsnips, and water. 
Stir in remaining paprika, plus additional salt if desired. 
Optional wine can be added now for an extra boost of flavor.
Cover again and  cook for an additional hour to hour and a half until meet is tender but vegetables are still holding their shape.  
Serve as is and enjoy!
or add small already cooked noodles of your choice, a dollop of sour cream, and a sprinkle of fresh chopped parsley
